Born in the Middle East, Yonatan Cohen’s love for cooking began with watching tv cooking shows. At 15, he left school to train in culinary arts, gaining experience in Tel Aviv’s top restaurants under chef Meir Adoni. By 21, he was head chef at Popina and Mashya.
Yonatan’s culinary adventures took him to Copenhagen, Italy, and Japan, shaping his philosophy of using quality ingredients, innovative techniques, and transforming surplus into new culinary products.
Here, at era in Brussels, Yonatan blends classic European dishes with modern fusion, offering a fresh take on fine dining that reflects his global journey and creative spirit.
